Lactic Acid Casein is produced from pasteurised skim milk by controlled acidification with lactic acid-producing bacteria. Fonterra manufactures a range of Lactic Acid Caseins. Lactic Casein from NZMP (ingredients by Fonterra) is a granular milk protein suitable for incorporation into a wide range of foods.
